Here’s the recipe for some motherfucking cocoa muffins with chocolate chips:
1 cup soy milk - 1 tsp. apple cider vinegar - 3/4 cups sugar - 1/3 cup canola/vegetable oil - 1 1/2 tsp. vanilla extract - 1 cup flour - 1/3 cup cocoa powder - 1/4 tsp. salt - chocolate chips.
In a bowl combine soy milk + vinegar. Add the sugar, oil, vanilla, and beat until foamy. In a seperate bowl whisk together the flour, cocoa, and salt. Add to wet ingredients. Finally, incorporate the chocolate chips (I prefer to put the chips on top of the batter once it’s already in the cupcake holders). Bake between 18 to 22 minutes.
